  • K08: Time as a public health control; procedures & records

    Found several containers of PHFs under time as a public health control (TPHC) with incorrect time written on containers. Observed time indicating discard time at 8:00pm. Discard time does not correlate with time of inspection. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Operator was directed to adjust time mark to end at 7:00pm.

    Measured boxes of raw chicken holding at 48F sitting on 2 door cold top prep area unattended. [CA] Maintain all cold PHFs held at or below 41F.

    Observed several bags of raw chicken stored in refrigeration unit and counter top. Facility currently has a permit condition that allows for facility to use to units of ventless fyers for heating of precooked food items only. See verbage as stated: TWO UNITS OF VENTLESS FRYERS ARE CONDITIONALLY APPROVED WITHOUT AN EXHAUST HOOD SYSTEM FOR THE HEATING OF PRECOOKED FOOD ITEMS ONLY.. IF THERE IS A FUTURE CHANGE IN MENU OR OPERATION, OR THE COOKING SYSTEM USE CAUSES ANY SANITATION, VENTILATION OR SAFETY PROBLEM, THE EXHAUST HOOD EXEMPTION MAY BE REVOKED AND AN APPROVED MECHANICAL EXHAUST SYSTEM MUST BE INSTALLED, OR THE UNIT REMOVED. VENTILATION PROBLEMS INCLUDE, BUT ARE NOT LIMITED TO, EXCESS HEAT IN THE FACILITY THAT RESULTS IN UNCOMFORTABLE WORK CONDITIONS FOR EMPLOYEES. THE EXEMPTION SHALL NOT BE DEEMED TO SUPERSEDE ANY LOCAL BUILDING AND FIRE CODE REQUIREMENTS. IF A FUTURE CHANGE OF OWNERSHIP OCCURS, THE NEW OWNER SHALL BE MADE AWARE OF THESE CONDITIONS. [CA] Facility shall discontinue to cook raw chicken in ventless fryer device until further documentation is provided indicating that device is approved for raw product without an approved mechanical exhaust system.
