K08: Time as a public health control; procedures & recordsFacility uses TPHC for partially cooked chicken stored in warmer, however, timer was not being used at time of inspection and written procedures are not available for review. Per operator, partially cooked chicken is stored in warmer for a maximum of 2 hours. Chicken is fully cooked to order and any remaining chicken in warmer after 2 hours is discarded.
[CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review.
