Utensils in standing water (68F). [CA]: Scoops and utensils shall be stored in water at 135F or above, in a clean and dry container, or in a dipper well with running water at a rate sufficient to flush away loose particles from utensils when storing in between use.
RISK FACTOR INSPECTION
A risk factor inspection is an inspection focusing on factors known to directly contribute to causing a foodborne illness. Structural issues and good retail practices are not assessed during this inspection. An exit interview was conducted with the operator to address the inspection findings. The OIR was issued to e-mail address that was verified onsite.
Pomegranate Juice measured to be 43F and kept out in speed wells. Per employees they had just removed from cooler within the last 10-5 minutes [CA] Keep PHFs at 41F and below for cold holding. [COS] All juices were returned to horizontal coolers.
