Hummus, ranch, and caramel dip are subject to Time as a Public Health Control (TPHC). No time logs were available at the time of inspection. PIC stated logs are kept at another location. Logs were later provided, however, they did not include hummus and ranch and instead listed a different item (goddess sauce). [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Time logs were provided and corrected.
