    Shellstock tags not maintained/unavailable for live clams and live mussels. Chef stated that the tags were removed and that they could not locate the tags. [CA] The identity of the source of shellstock that are sold or served shall be maintained for 90 calendar days from the dates of harvest by using an approved recordkeeping system that keeps the tags or labels in chronological order correlated to the date or dates the shellstock are sold or served. [COS/SA] Cioppino containing mussels and clams were VC&D. Remaining live shellstock were relocated into the walk-in refrigerator of the North Finishing Kitchen to isolate until tags were located. Clams and mussels were removed as an ingredient in the cioppino. ** Shellstock tags were located and provided for review.
