RISK FACTOR INSPECTION
A risk factor inspection is an inspection focusing on factors known to directly contribute to causing a foodborne illness. Sanitizing solution measured at 0 PPM concentration. Solution appeared new and not yet used. [CA] Maintain chemical solution for manual warewashing at 100 ppm (1Tbs of bleach (5.25%)/gal of water) for chlorine and 200 ppm (1 tbs of quaternary ammonium (10%)/2 gal of water) for quaternary ammonium. [COS] Sanitizing solution was replaced. New solution measured at 200 PPM quaternary ammonia.
The only handwash sink observed obstructed with sanitizing bucket, clean wiping cloths, and other items. [CA] Handwashing facility shall be clean, unobstructed, and accessible at all times. [COS] Obstructions were removed.
Waste drain pipe of the ice bin observed draining outside of the floor sink. Water observed on floor underneath all equipment. [CA] Liquid waste shall be disposed of through the approved plumbing system and shall discharge into the public sewerage or into an approved private sewage disposal system. [COS] Position of ice bin was adjusted.
ROUTINE INSPECTION
One dead adult cockroach observed in trap under sink. [CA] Clean and sanitize area of dead cockroaches or old droppings. Monitor regularly for signs of active vermin infestation. Ensure to eliminate infestation of signs are noticed.
