Ham held in preparation refrigerator measured 49F. [CA] PHFs shall be held at 41°F or below or at 135°F or above. Hold less in insert in order to maintain temperature <41F.

Pizza held in front display measured at 90F. [CA] PHFs shall be held at 41°F or below or at 135°F or above. TPHC paperwork distributed to the operator. Cooked chicken held in preparation refrigerator measured 46F, <4hrs. [CA] PHFs shall be held at 41°F or below or at 135°F or above.
ROUTINE INSPECTION
PHF is subject to TPHC. Written procedure is not available at time of inspection. [CA] Provide written procedures and time marking for PHFs utilizing time as a public health control (TPHC).
