Per operator, meat and plantains were reheated to 165F and assembled in the last 20 minutes, and operator provided logs for reheating times and temperatures. [CA] Keep PHFs at 135F or higher for hot holding. Recommend assembling items cold and then reheating all at once to minimize cooling during prep. [COS] Items were reheated in oven to 165F and returned to upright warmers.
