    Employee washed utensils with soap and water without sanitizing, utensil is placed on drainboard. Per employee, usually manager set up the sanitizer. After talking to manager on the phone, dishwashing employee tried to set up sanitizing sink in the middle sink of the 3 compartment sink. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Inspector provided instruction of proper warewash. Employee set up 100ppm of chlorine in 3rd compartment sink. Sanitize utensils for more than 30 seconds.
