    Measured raw chicken in the walk-in cooler at 57F. Per PIC, chicken was breaded and moved to the walk-in cooler 45 minutes prior to temperature measurement. Chicken was covered and wrapped tightly in plastic wrapping. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [COS] Chicken was voluntarily condemned and discarded. See VC&D form.

  • K40: Wiping cloths: properly used, stored

    Measured sanitizer concentration inside wiping cloth buckets at 0 ppm. Observed soiled wiping cloths stored on food preparation counters. [CA] Wiping cloths shall be stored in an approved sanitizing concentration when not in use.

  • K14: Food contact surfaces clean, sanitized

    Measured sanitizer concentration in the 3-compartment sink at 0 ppm. No active warewashing at time of inspection. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] PIC adjusted the sanitizer concentration to 200 ppm during inspection.

    At the hand wash sink near walk in cooler, the cold water valve was not dispensing cold water. Available nearby hand sink with working warm and cold water observed. PIC placed a work order. [CA]: All hand sinks shall be able to provide warm water of at least 100F and cold water.

    At the hand wash sink near walk in cooler, the dispenser was not dispensing single use towels. Available nearby hand sink fully stocked with single use towels and hand soap observed. PIC placed a work order. [CA]: All hand wash sinks shall provide single use towels in approved and permanently installed dispensers.

  • K41: Plumbing approved, installed, in good repair; proper backflow devices

    At the prep sink, the waste water drain pipe was not indirectly plumbed to the floor sink, causing leak. Drain pipe was pushed back away from the floor sink. [CA]: Properly dispose liquid waste into an approved floor sink. Repair drain pipe. [COS]: On site maintenance staff repositioned the drain pipe to be indirectly plumbed at the floor sink with a 1 inch air gap.
