Observed cooked boba pearls were time-marked to be discarded at 3:30pm today. TPHC written procedures were available.

Observed opened large bags of sugar in the rear area. [CA] After opening prepacked foods, store food inside a rigid container with a tight-fitting lid.

A metal probe thermometer was not available. [CA] Obtain a metal probe thermometer to measure internal food temperatures.

Inside a container of sugar: observed scoop was stored with the handle embedded in the sugar. [CA] Store scoops so that handles are not in contact with food to reduce risk of contamination.

*Repeat violation* At multiple floor sinks: observed lack of one inch air gap between the drain pipes and the floor sink. [CA] Air gaps must be at least twice the diameter of the water supply inlet and may not be less than one inch.

Observed wiping cloths stored directly on countertops. [CA] Store wiping cloths in containers of sanitizer solution when not in use.

Observed a plastic filter funnel was hanging on the splash guard of a handsink in the prep area, partially obstructing the sink. [CA] Do not store objects on or inside handsinks; handsinks must be unobstructed to encourage frequent handwashing.
