Facility must submit a ventilation exemption application to EH Plan Check.

    Tuna and salmon in cold holding inserts measured 46F and 48F respectively. Per PIC, it was placed into the cold holding inserts after preparation one hour prior to temperature measurement. Imitation crab in cold holding insert measured 44F, per PIC, it was placed into cold holding insert after preparation 1.5 hours prior to temperature measurement. [CA] Once items are prepared, place them into appropriate refrigeration units to cool down to 41F or below prior to placing into cold holding inserts.
