  • K07: Proper hot and cold holding temperatures

    Pink drink mix with coconut milk measured to be 46F. Per employee drink was just taken out from cooler about 30 minutes prior and is kept out until used up or discarded. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] PHFs shall be kept under time as public health control (TPHC). When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. TPHC paper work was provided to operator. Employee labeled time on drink.
