ROUTINE INSPECTION
Designated person in charge was not available at time of inspection. [CA] A “person in charge” who is responsible for operation of facility shall be present at the food facility during all hours of operation.
Observed employee cutting raw chicken on preparation table. After complete, employee cleaned table with a wet wiping cloth. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Instructed PIC to sanitize food preparation counter.
Observed cups/bowls used as scoops in bulk storage containers (flour, rice).Observed handle of macaroni salad scoop in contact with macaroni salad. [CA] Provide scoops with handle and store scoop handle in such a way that the handle does not come in direct contact with food to prevent contamination.
Observed employee cup stored on counter above food preparation areas and an employee cup on food preparation equipment. [CA] No person shall store clothing or personal effects in any area used for the storage and preparation of food or food contact surfaces.
Raw meats measuring 49F-55F on ice blocks next to stove were on time control instead of temperature per manager on the phone. Time should be written on the time board however, previous days time was written. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Raw meats were time marked for four hours. TPHC forms provided to PIC. Please complete and provide at follow up inspection. Minor: Several PHF items in cold holding preparation unit measured 45F. [CA] PHFs shall be held at 41°F or below or at 135°F or above.
Observed many wiping cloths stored on counters throughout preparation area. In the front service area, there was a sanitizing bucket that PIC stated had chlorine in it. Chlorine measured 0ppm. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).
Food in reach in freezer is not covered. [CA] Ensure that food that is stored is covered to protect from contamination.
Observed employee at soda fountain filling drink, go to the back, drink from cup and then go back into food preparation without washing hands. [CA] Properly wash hands with soap, warm water and dry using single use paper towels as required.
Observed open bulk bag of panko stored on shelf. [CA] Store open bulk foods in approved NSF containers with tight fitting lids.
