ROUTINE INSPECTION
Observed soiled rags on food prep surfaces. [CA] Store wiping rags in sanitizer bucket with proper sanitizer concentration (100ppm chlorine or 200ppm quat).
No paper towels in dispenser in employee restroom. [CA] Ensure dispensers at handwash stations are filled with soap and paper towels at all times.
Observe several gnats in facility. [CA] Eliminate pests from facility. Recommend working with professional pest control.
Observed utensils in the sanitizing compartment of the 3 comp warewash sink with diluted chlorine solution measuring at 25ppm. [CA] Ensure warewashing is done with 100ppm of chlorine (or 200ppm of quat). [COS] PIC added additional chlorine to measure at 100ppm.
Observed potentially hazardous food that measured in a temperature danger zone located in a warmer (boba 123F). The boba is subject to time control and was not time-marked. PIC stated the boba was put in the warmer around 1pm. [CA] Ensure PHFs that are subject to time control are time marked for 4 hours and discarded at the end of the 4 hour mark. [COS] PIC will discard boba within 4 hours.
Floor was extremely sticky. [CA] Thoroughly clean and sanitize floors on a regular basis.
