    Paper towel is stored outside the dispenser. Per PIC, the paper towel is wrong size and it does not fit in the dispenser. [CA] Single use paper towel shall be stored inside dispenser at all times. Provide correct size paper towels in the dispenser.

    Final rinse temperature measured at 149F in dish machine. No active warewashing at the time of the inspection. [CA] Mechanical sanitization shall be accomplished in the final sanitizing rinse by achieving a utensil surface temperature of 160°F (or manufacturer's instruction). [SA] PIC will manually sanitize dishes with quaternary ammonium sanitizer until dish machine is repaired.
