In the back of house area, near the soda syrups, the doors have been removed exposing the facility to an unfinished electrical panel area.
[CA] Walls and/or floors in food preparation area shall be kept clean and in good repair. Repair the wall with a durable, smooth, nonabsorbent, and easily cleanable surface.

1. Repeat Violation: Observed cardboard being used to line the bottom shelf of a prep table.
[CA] Discontinue the use of cardboard boxes to line shelves/flooring, use approved equipment made of materials that is easily cleanable, durable, smooth, and nonabsorbent.
2. Repeat Violation: Observed bowls being used as scoops for bulk dry ingredients
[CA] Use approved utensils such as scoops or spoons with handles to ensure hands do not come in direct contact with food.
3. All CO2 tanks were found unrestrained (1 in the back of house and 5 in the bar).
[CA] All pressurized cylinders shall be securely fastened to a rigid structure.

Observed customers enter the bar area to access the self service soda machine.
[CA] The "person in charge" shall ensure that persons unnecessary to the food facility operation shall not be allowed in the food preparation, food storage, or warewashing areas. Facility may clearly delineate the soda fountain area from the bar to prevent access into the bar area.

Food preparation area, consumer access consumer access to a food facility through the food preparation area is permissible, at the discretion of the permit holder, if Ready-To-Eat Foods are prepared in approved areas separated from sources of contamination by a space of at least three feet from the consumer and in areas that are separate from raw or undercooked foods. The route of access shall be separated from the required space by a rail or wall at least three feet high or otherwise clearly delineated.

1. In the bar area, at the floor sink near the soda dispenser, the discharge pipe does not have an air gap.
2. In the bar area, at the floor sink between the two keg coolers, the two door cooler's discharge hose does not have an air gap.
[CA] All equipment that discharges liquid waste shall be drained by means of indirect waste pipes, and all wastes drained by them shall discharge through an airgap into a floor sink or other approved type of receptor.
