    At the food prep unit located nearest the walk-in cooler, raw shell eggs are over stacked in the inserts and measured at 48F. [CA] Potentially hazardous foods when cold holding shall be held at or below 41F. [COS] Employee relocated the over stacked eggs into the walk-in cooler.

  • K36: Equipment, utensils, linens: Proper storage and use

    Scoop for ice machine is stored inside the ice machine with the handle of the scoop in direct contact with the consumable ice. [CA] Scoops shall be stored in a manner where the handle is not in direct contact with the consumable ice to prevent cross-contamination.

    Drain line from the soda machine extends into the floor sink. [CA] Provide a minimum of a one inch air gap between the end of anb equipment drain line and the rim of the floor sink to protect the equipment from back flow contamination.
