    Measured cooked veggies at 90 F within a closed to-go container within the 2 door upright display refrigerator. [CA] Properly store cooling foods in such a way to allow proper air flow. [COS] Cooked veggies uncovered and relocated to the walk in refrigerator to be cooled to and held at 41 F or below. Measured cooked pork within covered bowls at 110 F stacked on a rack next to the food preparation sink. [CA] After heating or hot holding, Potentially Hazardous Foods (PHFs) shall be cooled rapidly from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours. FOLLOW-UP INSPECTION

Follow-up inspection to routine inspection conducted on 9/10/2024. One minor handwashing violation was observed at the time of inspection. Observed proper warewashing at the time of inspection. Fresh noodles have been relocated to the under counter refrigerator for cold holding during preparation. Operator does not intend to use TPHC. Food preparation was not occurring within the warewashing sink, all food in good condition. Continue to work on minor violations K35 and K44 noted during the routine inspection.

    Measured egg noodles at 55 F within containers at the preparation line. PIC stated that the noodles were removed from refrigeration two hours prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Noodles were discarded at the end of the lunch service. Submit TPHC procedures to inspector for review and approval. Measured duck feet at 73 F and hydrated sea slugs at 68 F within water at the storage rack. PIC stated that the items were removed from preparation 2 hours prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Duck feet and sea slugs relocated to the walk in refrigerator to be cooled to and held at 41 F or below.

    Observed an two unapproved noodle preparation machines within the kitchen. Machines lack a listing from an ANSI accredited program. [CA] All utensils and equipment shall be certified or classified for sanitation by an American National Standards Institute (ANSI) accredited certification program (e.g. NSF, UL EPH, UL Sanitation, CSA Sanitation, or ETL Sanitation).
