    One of the handwash sinks located in the deli kitchen was clogged. [CA] Repair the sink to drain the gray water properly.

    There was excessive water accumulation on the floor area. There was some slime buildup on the shelves located in the deli kitchen area as well. [CA] Conduct a regular thorough cleaning of the floor below the shelves and keep the floor area neat and dry.

    Freshly boiled steak on a big pot was stored next to the stove below 130 oF. The chef said the steak stew was cooked an hour ago. [CA] All potentially hazardous foods like garlic in oil, cut melons, raw sprouts; cooked foods of plant origin; foods of animal origin and any other food capable of supporting the rapid and progressive growth of infectious or toxigenic microorganisms or the slower growth of Clostridium botulinum shall always be held at 41°F or below or at 135°F or above. If any of the potentially hazardous food products are going to be stored at room temperature, a proper time/temperature logs must be used which indicate the time taken out of the safe temperature and the time the food products shall be discarded. The chef reheated the stew and stored it on the steam table (COS). Roasted chicken and chicken wings stored on the upright oven and on the self-serve hot case were measured between 110 oF and 130 oF. The chef said the roasted chicken was cooked an hour ago while the wings were cooked more that two hours ago. [CA] All potentially hazardous foods like garlic in oil, cut melons, raw sprouts; cooked foods of plant origin; foods of animal origin and any other food capable of supporting the rapid and progressive growth of infectious or toxigenic microorganisms or the slower growth of Clostridium botulinum shall always be held at 41°F or below or at 135°F or above. If any of the potentially hazardous food products are going to be stored at room temperature, a proper time/temperature logs must be used which indicate the time taken out of the safe temperature and the time the food products shall be discarded. The chef reheated the roasted chicken while the wings were voluntarily condemned and destroyed (SA).

Follow up for no hot water during limited inspection on 1/21/2026. Measured hot water at all sinks. Deli/Tortilleria Dept. is approved to reopen. PIC provided via email spec sheets for new water heater. Serial #. A352503504 BTUH: 199,900 GAL CAP: 100 Spec. sheets will be reviewed for approval and may require plan check review and approval.

ROUTINE INSPECTION

Limited inspection conducted due to major violation of no hot water. Per PIC, the dept. has not had hot water since the day before and is schedule to have the water heater replaced in the next day or two. Due to no hot water, no active preparation or ware washing can be conducted. Deli / Tortilleria is to cease and desist from any food handling / food preparation until the dept. is re-inspected and written approval is obtained to operate. Once the above is corrected, please reach out to the Jennie Penaloza at 408-918-3471 or the main office at 408-918-3400 to schedule a follow-up inspection to reopen the facility. ***Subsequent follow up inspection after first follow up shall be billed $298/hr during business hours and $645/hrs (minimum of 2 hours) during nonbusiness hours upon availability. *** *** Measured hot water (123F - 138F) at the POLLO Dept. (PR0425839) and the TAQUERIA dept. (PR0376456). These departments can remain open however no food can be cooked/obtained from the deli dept. to supply the Pollo Dept. or Taqueria. Discussed with PIC, that Plan Check review and approval will be required if new water heater is a different model/type from the current one.     Missing probe thermometer for pollo area to measure internal temperature of chicken. Missing fridge thermometer for fridge in pollo area [CA] The thermometer in the reach-in refrigerator shall be placed where it is easily visible while checking refrigerator temperature. An accurate easily readable metal probe thermometer (accurate to +/- 2°F) that is designed to measure the temperature of thin masses shall be provided and readily available to accurately measure the temperatures of potentially hazardous foods.
