    Measured hot water at the 3-compartment sink near the upright dishwasher to be 110F. [CA] Provide hot water (120F) at the 3-compartment sink.

  • K14: Food contact surfaces clean, sanitized

    Measured final rinse temperature of upright dishwasher to be 145F. The dishwasher was run 3 times. Per deli manager, the dishwasher is a high-temperature dishwasher. Note: chlorine was measured at 0ppm. [CA] Repair dishwasher so that it can sanitize dishes at 160F. Until it is repaired, the dishwasher may be used to wash/rinse dishes, but dishes must be manually sanitized in the 3-compartment sink.

    Observed approximately 5-10 small flies throughout the food prep area. [CA] Keep facility clear of flies.

    Under the center prep sink: observed drain pipe extended into the floor sink. [CA] Maintain a one inch air gap between the bottom of the drain pipe and the top of the floor sink.

    Chlorine test strips for the dishwasher were not available upon request. [CA] Keep chlorine test strips available.

    Measured chlorine in upright dishwasher to be 10-25ppm. No active dishwashing was occurring. Dishwasher was run 3-4 times. [CA] Repair dishwasher so that it can sanitize dishes with 50ppm chlorine.
