  • K14: Food contact surfaces clean, sanitized

    Chlorine concentration in the warewash machine located in the Bowery room measured at 0ppm; test for hot water and the temperature measured at 141F for final rinse temp. [CA] Ensure mechanical warewash machine provides 50ppm chlorine or hot water measuring at 160F. [COS] PIC will have staff manually warewash until unit can be repaired.

ROUTINE INSPECTION

NOTE: While conducting the routine inspection an order of food was served to a customer. Per PIC they receive the food from a sister facility FA0230868 - Dr. Funk. Provide an SOP to district specialist. A permit upgrade may be required. A follow up inspection will be conducted to verify compliance. The first follow up inspection is free of charge, any and all subsequent follow up inspections shall be charged at the approved hourly rate of $298/hr, minimum of one hour.

  • K23: No rodents, insects, birds, or animals

    In the front bar area, in one of the cabinets containing bitters, several dead cockroaches were found. No other evidence of a cockroach infestation were observed. NOTE: Per PIC, they receive regular pest control service. PIC was able to show service records upon request. [CA] Clean and sanitize area of dead cockroaches. [COS] Staff cleaned up the cabinet.

  • K06: Adequate handwash facilities supplied, accessible

    In the front bar area, three of the hand washing sinks had issues either missing soap, paper towels, or both. One hand washing station was fully stocked. [CA] Handwashing facilities shall be equipped with handwashing cleanser and single-use sanitary towels in dispensers. [SA] Staff provided soap and paper towels for each hand washing station at time of the inspection.

    1. In the front bar area, at the hand sink closest to the prep cooler, water measured at a peak of 85°F . [CA] Handwashing facilities shall be equipped to provide minimum 100°F water under pressure for a minimum of 15 seconds. *REPEAT VIOLATION* 2. Hot water at the three compartment sink reached a maximum of 105°F. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks. Failure to comply may result in further enforcement from this department.

    In the back bar area, in two bottles of alcohol, the bottles were found adulterated with flies. [CA] Food is adulterated if it bears or contains any poisonous or deleterious substance that may render it impure or injurious to health and shall be discarded immediately.
