On-site to conduct a follow-up to the routine inspection (dated 2/10/2026). The following major violations have been corrected: - K06: Inadequate handwash facilities. Observed all handwash stations are fully accessible and stocked with soap and paper towels at the time of inspection. - K08: Improper use of Time as a Public Health Control (TPHC). Observed time marking for sushi rice at the time of inspection. Per PIC, facility only uses TPHC for sushi rice and all other hot foods are kept in refrigeration following cooking. Completed TPHC documentation for sushi rice during inspection. Per previous routine inspection, this facility shall update their menu to indicate that all hot food items are cooked in the compact mobile food operation (outdoor food trailer), as this information shall be provided to the customer. Standard operating procedures for all hot food items and updated menu shall be provided to specialist. The facility has earned a "PASS" for this inspection. Continue to address remaining violations as cited on the routine inspection report.

ROUTINE INSPECTION

* A follow-up inspection to verify compliance of major violations will be conducted within five business days. The first follow-up inspection is free of charge. Subsequent follow-up inspections after the first follow-up shall be billed at $298/hour (one hour minimum) during normal business hours (Monday - Friday, 7:30 AM to 4:30 PM), and $645 (minimum of two hours) during non-business hours, and upon inspector availability. * Facility utilizes a compact mobile food facility (CMFO) or trailer in the back, outdoor area for cooking all hot food items on the menu including chicken teriyaki, tempura, and deep fried sushi. Confirmed that this CMFO (26-0451) is permitted by this department. Per manager, foods are cooked daily in the morning, cooled and stored in refrigeration, then reheated upon customer order. This facility and CMFO is used to support other food trucks under the same ownership (Akita Sushi). * Per previous inspection report, the menu shall indicate that all hot food items are prepared in the CMFO. Observed menu has not been updated with this information as of this inspection.

    Measured the sanitizer concentration in the 3-compartment sink at 0 ppm. No active warewashing at the time of inspection. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Employee adjusted chlorine sanitizer level to 100 ppm during inspection.

[CA] An accurate easily readable metal probe thermometer (accurate to +/- 2°F) that is designed to measure the temperature of thin masses shall be provided and readily available to accurately measure the temperatures of potentially hazardous foods. 2) Facility refrigeration units lack thermometers. [CA] A thermometer (accurate to +/- 2°F) shall be provided and correctly located in each hot and cold holding unit containing potentially hazardous foods.

ROUTINE INSPECTION

A compact mobile food facility, CMFO, (food trailer that includes a ventilation hood, single deep fryer, 2 burner propane gas stove, flat grill and attached under counter refrigerator) is used to cook all hot food items on the menu such as chicken terriyaki, tempura (shrimp/vegetables) deep fried sushi. This CMFO is permitted by our department (PR0450770). Per manager/owner, the hot food items are cooked daily in the morning then stored in the refrigerator. Food is then reheated upon customer order. Fried items (deep fried sushi rolls are fried upon customer order and tempura items are fried per order or prepped ahead and are time marked using time as a public health control It is required for the menu to be updated to indicate that all hot food items are cooked in the compact mobile food operation (food trailer), as this information shall be known to the customer. Standard operating procedures will be required for all hot food made in the compact mobile food operation. Provide these procedures and updated menu by 4/25/25 and email to aleli.crutchfield@deh.sccgov.org.
