- K40: Wiping cloths: properly used, stored
Wiping cloths stored on prep surfaces at the prep-line, kitchen and storage room. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).

Operator unable to provide written procedures for boba under time as a public health control (TPHC). Boba was time marked and operator knew what time to discard [CA] When TPHC is used, written procedures shall be maintained and available upon request. *REPEAT VIOLATION*
