    Observed the open boxes of things like sugar packets, etc stored on the floor. [CA] Remove from the floor and store on the shelves.

  • K45: Floor, walls, ceilings: built,maintained, clean

    Observed the floors to be soiled and turning black. Also observed used cardboard to line the floor and it is now dirty and deteriorated. The floor sink is soiled and turning brown. [CA] clean the floor and remove the cardboard. Clean the soiled floor sink.

    Observed the used wiping cloths on the table tops. [CA] The used wiping towels must be in sanitizer between each use. [CA] corrected.

Espresso is cooked in the pan and then poured into the ice trays to be frozen. The electric table top stoves are approved conditionally on the permit.

    The person in charge improperly made a sanitizer for dish washing. [CA] PIC must know how to propely perform duties such as setting up the dish sink. Besides the PIC there is one other employee with only 2 days on the job here in this facility. Always wash, rinse, and sanitize with 100ppm chlorine in the sanitizer compartment.

    Observed personal belongings on shelves and in other areas of the kitchen. [CA] Install wall mounted lockers to store personal belongings inside.
