    3 comp sink hot water valve was turned off in the beginning of inspection. Hot water measured up to 114F until the hot water stopped dispensing. After turning on the valve, maximum water temperature measured at 117F. [CA]: Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks. Discontinue turning off hot water valve. Note: maximum water temperature in the facility measured at 117F.

  • K05: Hands clean, properly washed; gloves used properly

    Employee handled cellphone and then proceeded to handle food without washing hands prior. [CA]: Employees shall properly wash hands when changing gloves, when changing tasks, prior to handling food, utensils or equipment, after touching body parts, and when contamination occurs or as required. Employees shall use designated hand sink, soap and disposable paper towels to wash hands. [COS]: Employee washed hands at hand sink.

-Provided proper cold holding temperature on cooling units -Employee locker storage was not installed. Per PIC, they accidentally bought the wrong one. Ensure employee lockers are secure to the wall. -CDFA license for ice cream observed: Plant #: 06-20455F; RC #: 242561908 -Facility opened on September 25 per PIC. Discussed that a food safety manager certificate is required within 60 days since operation began and food handler training for all employees who handle open food and/or who handles food contact surfaces (for ex: washing dishes) within 30 days of employment. -Discussed diligent preparation with PIC.
