FOLLOW-UP INSPECTION
On-site to conduct a follow-up to the last routine inspection (dated 4/13/2026). The following major violations have been corrected: - K07: Improper holding temperatures. Measured all items in the steam table and refrigeration units at proper holding temperatures. See measured observations. Discussed cooling procedures with PIC. Per PIC, facility makes large bulk batches of rice and beans twice a week. Recommend to make smaller batches over the week to facilitate proper cooling given space restraints. Discussed usage of shallow containers, ice baths and paddles, and keeping cooling foods uncovered. The facility has been given a "PASS" placard for this inspection. Continue to address remaining violations as cited on the routine inspection report.

Measured rice and beans in the walk-in cooler from 45-60F. Per PIC, rice and beans was cooked yesterday and cooled last night. Observed rice and beans stored in deep, fully covered containers. [CA] After heating or hot holding, Potentially Hazardous Foods (PHFs) shall be cooled rapidly from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours. Approved cooling methods include: 1) Placing the food in shallow pans 2) Separating the food into thinner or smaller portions. 3) Using rapid cooling equipment (Ex. blast chiller) 4) Using containers that facilitate heat transfer (ex. stainless steel) 5) Adding ice as an ingredient. 6) Using ice paddles 7) Using an ice bath and stirring frequently 8) Accordance with a HACCP plan. Cooling foods shall have enough space around the containers for cold air to circulate, be loosely covered, or uncovered and stirred as frequently needed to evenly cool. [COS] Rice and beans was voluntarily condemned and discarded during inspection.
