- K36: Equipment, utensils, linens: Proper storage and use
1) Observed working utensils are stored in standing water measuring at 71F. [CA] Utensils shall be stored in the following manner: 1) in the food with their handles above the top of the food and the container, 2) in running water, 3) in a container of water at 135°F or above, 4) at room temperature if washed within 4 hours of initial use. 2) Observed bowl without handle stored inside bulk ingredient bins. [CA] Provide approved utensils such as scoops or containers with handles to ensure hands do not come in direct contact with food.

Observed boba on the preparation counter lacks time markings. Per PIC, boba was cooked 1 hour prior to temperature measurement. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] PIC added time marking to the boba warmer during inspection.

In the restroom, measured the maximum water temperature in the handwash sink at 65F. [CA] Water shall be supplied at a temperature of 100-108°F at handwash stations as measured from the faucet.

Observed the handwash sink in the back area is obstructed by equipment and inaccessible. Nearby handwash sink in the front line is available for use. [CA] Handwash stations shall be fully accessible and stocked at all times.
