    1. Hot water at the three compartment sink measured at a max of 113F. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks. 2. Water at the handwash stations measured at a maximum of 90F. [CA] Handwashing facilities shall be equipped to provide minimum 100°F water under pressure for a minimum of 15 seconds.

    1. Repeat Violation: The soap dispenser did not work at the handwash sink near the three compartment sink. Note: There is another handwash sink on the other side of the wall. [CA] Provide handwashing cleanser in dispenser at handwash stations at all times. [SA] A pump bottle of soap was made available for use. 2. The employee restroom handwash station lacked paper towels. [CA] Single-use sanitary towels shall be provided in dispensers; heated-air hand drying device may be substituted for single-use towels. [COS] Staff restocked the dispenser. 3. The handwash station at the far corner near the steam table lacks a soap dispenser, lacked paper towels in the dispenser, and was obstructed by hotel pan lids. [CA] All food facilities shall provide an operable handwashing station. [COS] Staff removed the obstruction and restocked the paper towel dispenser. A pump bottle of soap was made available. 4. The handwash sink near the microwave had a head of lettuce in the basin. [CA] Maintain handwash sinks free of food and unobstructed. [COS] Staff moved the lettuce into the near by prep sink to be washed.

    Repeat Violation: The employee and customer restrooms had the toilet tissue stored outside of the dispenser. [CA] Toilet tissue shall be provided in a permanently installed dispenser at each toilet.

    Facility's quaternary ammonia testing materials are expired as of 12/2023. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.

    The deli slicer has an accumulation of grease on the underside of the equipment. A dead old cockroach was also observed under the slicer. Note: No other activity of vermin observed. Facility is on monthly pest control service. [CA] Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

    Facility lacks a probe thermometer. [CA] An accurate easily readable metal probe thermometer (accurate to +/- 2°F) that is designed to measure the temperature of thin masses shall be provided and readily available to accurately measure the temperatures of potentially hazardous foods.

  • K14: Food contact surfaces clean, sanitizedCritical

    Staff were observed skipping the sanitizing step of ware washing. [CA] Manual warewashing shall be accomplished by using a three-compartment sink where the utensils are first precleaned, washed with hot soapy water, rinsed with hot water, sanitized with an approved method, and air dried. Use 1 TBS of bleach (5.25%) per 1 gal. of water for chlorine solution (100 PPM). Use 1 tbs of quaternary ammonium (10%) per 2 gal. of water for quaternary ammonium (200 PPM). [COS] Inspector educated on proper ware washing. A new solution was made and dishes were sanitized. Provided sticker handout.

    2. Food Handler Cards were not available upon request. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire.

    1. Two out of three of the integrated drain stoppers of the three compartment sink do not work. [CA] Ensure to maintain equipment in good repair. Replace or repair the drain stoppers. 2. The two TurboChef ovens on the permit conditions are no longer installed. Observed an Amana oven installed and a different TurboChef oven on a cart in the hallway with the restrooms. [CA] New and/or replacement food equipment shall be certified or classified for sanitation by an American National Standards Institute (ANSI) accredited certification program (e.g. NSF, UL EPH, UL Sanitation, CSA Sanitation, or ETL Sanitation). A person proposing to build or remodel a food facility shall submit plans and specifications for review and shall receive plan approval prior to starting any new construction or remodeling.   • K07: Proper hot and cold holding temperatures

    PHFs (turkey, roast beef, sliced tomatoes, etc) in the main prep cooler were measured between 43-47°F. Per staff, they restocked the unit when they started their shift an hour prior. Note: Staff stated they are aware of the cooler having issues as there is internal ice build up in the bottom section and have a scheduled maintenance for Friday. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] PHFs were moved to the salad prep cooler to cool down and maintain temperature.
