    The staff restroom lacked paper towels. [CA] Handwashing facilities shall be equipped with handwashing cleanser and single-use sanitary towels in dispensers. [COS] PIC had the restroom restocked at time of the inspection.

    Frozen pizza boxes were found stored on a counter in the kitchen out of temperature control. Per PIC, they were planning on reheating them in about an hour. [CA] Use only small portions of food during preparation so that it does not exceed the maximum amount of time allowed for diligent prep. Remove items from temperature control only when needed.

    The restroom toilet tissue dispenser is in disrepair, a roll was available on top of the toilet. [CA] Toilet paper dispenser shall be maintained and in good repaired.

    1. In the restroom hand sink and the coffee bar hand sink, there is no soap in the dispenser. A pump bottle of soap is available for use. [CA] Provide handwashing cleanser in dispenser at handwash stations at all times. 2. In the restroom hand sink and the coffee bar hand sink, there are no paper towels in the dispenser. A roll of paper towels are available for use. [CA] Single-use sanitary towels shall be provided in dispensers; heated-air hand drying device may be substituted for single-use towels.

  • K07: Proper hot and cold holding temperatures

    At the coffee bar area, near the self-service counter, milk in a canister was measured at 47°F. Per staff, they refilled the canister about 20 minutes prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [SA] PIC agreed to use the milk or discard after 4 hours. Note: Per PIC, they refill the milk canister frequently (20-30 minutes). Discussed using TPHC for milk and provided guidelines.

    The walk in freezer is overfilled with food being stored on the floor. [CA] Food shall be stored at least 6 inches above the floor to prevent contamination.

    Chlorine at the dishwasher was measured at 0 PPM. [CA] Maintain chlorine in mechanical warewash machine at 50 PPM. [SA] Facility agreed to manually wash, rinse, and sanitize dishes in the three compartment sink.
