    Found employees backpack stored on floor in back storage area. Observed locker available, however unable to accomodate size of backpack. [CA] Lockers or other suitable facilities shall be provided and used for the orderly storage of employee clothing and other possessions.

    Measured french fries and tatter tots holding between 76F - 88F on prep table at cooks line. Per operator, PHFs is under time as a public health control (TPHC). Observed no signs of time log, markers and or timer. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Operator directed to time mark PHFs at cooks line.
