    1) Handwash sink at bar observed to have broken soap dispenser. Bar observed to be closed at time of inspection. Per employee bar isn't open until dinner. [CA] Handwash sinks shall be fully stocked with liquid cleanser and paper towels at all times. [COS] Handsoap dispenser was replaced with handpump. 2) Handwash sink next to utensil storage area without splash guard. [CA] Provide 6" splash guard between handwash sink and food storage/prep area to protect things from contamination. 3)Shaker cups observed to be stored on paper towel dispenser right in front of handwash sink. [CA]Keep handwash sink at bar unobstructed. Store utensils and food contact equipment away from handwash sink to prevent contamination of cups. [COS] Cups were moved.

    Under counter dishwasher at bar observed to have entire chemical well dry. Dishwasher observed to not have soap, rinsing agent, or sanitizer. 0ppm chlorine measured when running the dishwasher. No dishwashing observed at time of inspection. Per operator bar doesn't open until dinner service. [CA] Maintain chlorine in mechanical warewash machine at 50 PPM. [COS] Chemical well was refilled and machine was primed and measured to have 50ppm chlorine.

[CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Sanitizer compartment was drained and refilled. Quat ammonia measured to be 200ppm.
