This limited/routine inspection is conducted for a change of ownership for SR0885873 NEW OWNER: Sodexo America, LLC NEW FACILITY NAME: Sodexo @Meta - Gravity Cafe The applicant has completed the application for an Environmental Health Permit. FP17 $2,839.00 will be invoiced and mailed to the address on the application. Payment shall be paid within 10 days of receipt of the invoice. The owner is responsible for contacting our department if an invoice is not received within 30 days of the change of owner’s date. Permit issued and valid: 09/01/26- 08/31/27. The permit will be deemed invalid if the permit fee is not paid in full within 30 days of the date of this report. This report serves as a temporary permit until the official permit is mailed to the facility. When the invoice for the facility is received, payment must be made within 10 days. Okay to operate as of today. The official Environmental Health permit must be post on public view, and a copy of the most recent inspection report must be kept on file for review by anyone upon request. All employees who are engaged in food preparation service, and storage, and who do not have a food manager certificate must have valid food handler cards within 30 days of hire date. Food Safety Manager Certificate and Food Handler cards shall be available for review.     In the warewash room, at the 3 compartment sink, measured hot water at 114F. In the kitchen area, at the prep sink, measured hot water at 102F. [CA] Ensure an adequate supply of hot water is provided at 120F at all times.

    Some recently sanitized utensils were stacked together on the utensil storage shelf. [CA] Air dry all clean utensils before staking them together.

    Multiple drain flies were observed in the janitorial sink, warewash sink, and some in the produce wash area. [CA] Eliminate vermin from the facility by a legal method.

  • K41: Plumbing approved, installed, in good repair; proper backflow devices

    Drainpipes from some of the preparation sink in the kitchen area were immersed inside the floor sink. [CA] To prevent possible contamination from backup of sewage, please provide at least one inch air gap between the drainpipes and the floor sinks.

  • K40: Wiping cloths: properly used, stored

    Multiple wet/soiled wiping cloths were stored on the preparation tables, wash area, and the counters [CA] Wet/soiled wiping cloths must be stored in a bucket that has standard sanitizer concentration in between use which is 200 ppm quaternary ammonia or 100 ppm chlorine (bleach).

    At the front counter kitchen area, to the right of the pizza oven, observed food debris accumulation around deep fryer and oven. [CA] Ensure facility floors are frequently cleaned and maintained to prevent harborage of vermin.

    In the warewash room, at the 3 compartment sink, measured hot water at 114F. In the kitchen area, at the prep sink, measured hot water at 112F. [CA] Ensure an adequate supply of hot water is provided at 120F at all times.

    At the carving station, in the 2 door undercounter hot holding unit, measured cooked turkey at 133F. On the counter-top of the carving station, under the heating lamps, measured cooked turkey at 131F. Per temperature log, cooked turkey was prepared at 11:00am, measured with an internal temperature of 170F and stored in the hot holding unit at the carving station. [CA] Ensure potentially hazardous foods are held hot at 135F and above to prevent bacterial growth. [SA] Operator to serve turkey by the end of lunch service at 2:00pm and discard, for a total of less than 4 hours from when removed from temperature control.
