    Observed active dishwashing with 0ppm quat ammonia. Dispenser tube observed to be dry and measured to dispense 0ppm quaternary ammonia. [CA] Manual warewashing shall be accomplished by using a three-compartment sink where the utensils are first precleaned, washed with hot soapy water, rinsed with hot water, sanitized with an approved method, and air dried. Use 1 TBS of bleach (5.25%) per 1 gal. of water for chlorine solution (100 PPM). Use 1 tbs of quaternary ammonium (10%) per 2 gal. of water for quaternary ammonium (200 PPM). [COS] Employees manually added sanitize to 3-comp sink and submerged utensils and dishes into sanitizer solution.

    -3 live cockroaches observed in dumpster storage room: -2 immature roaches by right wall -1 adult roach by hollow metal tube. -1 dead cockroach observed from the top of metal tube inside dumpster room -4 Dead cockroaches observed in trap inside facility under shelf near janitorial sink. [CA] Clean and sanitize area of dead cockroaches or old droppings. Contact pest control to abate vermin issue. Recommend increasing pest control services to once a week for at least a month or until facility no long observed vermin activity and more traps to survey facility for signs of new vermin activity. Recommend coordinating pest control services to be timed with neighboring facilities for most effective treatment. [SA]Cockroaches were killed at time of inspection. Dumpster room does not share adjacent walls with brewery. Per operator: -Dumpster room is facilities shared in common and managed by building management. -Pest control comes monthly and recently came on Monday 7/14/2025 but does not have report yet. Operator provided pest control report from 2025. -Building landlord will be having pest control spray entire building 7/16/2025.
