ROUTINE INSPECTION
Open carrot and bean portion cups displayed for self service at the line while double doors leading into the multiple purpose room are open. Facility permit condition stated the following: "prepackaged food only due to roll-up doors to the exterior". [CA] Food on display shall be protected from contamination by the use of packaging. Provide lid or other suitable device to keep portion cups closed at all times when roll-up doors are open. Follow the SOP approved by this department.
Facility lacks a device or strip for measuring the final hot water sanitizing rinse of the warewashing machine. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.
