    Flies were observed in the butcher area. [CA] Food facility shall be kept free of non-disease carrying insects, weevils, ants, gnats, and fruit flies. [SA] Do not leave any dirty utensils and keep the area more clean to prevent flies.

    Three compartment sink has clean dishes drying in a sanitizer compartment and side board next to sanitizer has dirty cutting board. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. Use the side board next to the sanitizer to air dry the dish only. A side board next to wash is only for dirty dishes.
