Follow up due to repeated major TPHC violation. Upon inspection: -Sushi rice observed to be labeled to be discarded at 7:30PM. -Continue to label sushi rice and discard at time labeled. -Upright dishwasher measured to have 160F rinse cycle. All Major violations have been corrected. Continue to work on the other violations from routine inspection. This is a billable 2nd follow up inspection and facility shall be charged 298.00 for this inspection.

FOLLOW-UP INSPECTION

Follow up due to major dishwashing and TPHC(time as a public health control) Upon inspection: - Hight temp dishwasher measured to have rinse cycle less than 160F. Employee observed to be manually using chemical sanitization at time of inspection. Per operator facility is going to be using chemical sanitization. -Sushi rice observed to be labeled 11:00AM. Rice should have been discarded 4 hours after 11:00AM at 3:00PM. Facility had rice at 4:00PM. Operator VC&D sushi rice. One major violation has been corrected. 2nd billable follow up inspection shall be conducted to verify last remaining major violation. Work on other violations from routine inspection. Follow up due to major temperature and dishwashing violatoins. Upon inspection: Thai tea is now stored in coolers and not at room temperature. Thai tea measured to be 41F in 2 door under counter cooler at server area. Left cookline prep cooler measured to have: -Cut tomatoes at 40F -Cooked mushrooms at 41F Under the counter dishwasher measured to have 100ppm chlorine. All major violations have been corrected. Potatoes and mushrooms were also moved to middle prep cooler for holding.
