  • K43: Toilet facilities: properly constructed, supplied, cleaned

    Facility had a restroom out of order sign to prevent customer access to restroom use. Restroom also had an offensive odor. Note: Facility offers onsite consumption. [CA] Toilet facilities shall be maintained clean and in good repair. Toilet facilities shall be made available to customers when onsite consumption is offered.

  • K45: Floor, walls, ceilings: built,maintained, clean

    1. There is a ceiling tile missing above the walk in freezer. 2. The FRP inbetween the two chest freezers is in disrepair and detaching from the wall. [CA] Ensure to maintain the floors, walls, and ceilings of the facility clean and in good repair.

  • K33: Nonfood contact surfaces clean

    In the walk in freezer there is ice build up on the boxes of food and the floor. [CA] Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

    The two vents above the chest freezer have a heavy accumulation of dust. [CA] Clean the vents in the kitchen above the chest freezer.

  • K36: Equipment, utensils, linens: Proper storage and use

    The ice cream scooper was stored in water measuring at 128°F. The heated well had a 4 hour timer counting down. [CA] Utensils shall be stored in the following manner: 1) in the food with their handles above the top of the food and the container, 2) in running water, 3) in a container of water at 135°F or above, 4) at room temperature if washed within 4 hours of initial use.

    Repeat Violation: Water temperature measured at a peak of 114°F at the 3 compartment sink before setttling at 108°F, 116°F in kitchen hand wash sink, 88°F in hand wash sink in restroom. Inconsistent hot water supply throughout facility. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks. Handwashing facilities shall be equipped to provide minimum 100°F water under pressure for a minimum of 15 seconds.

    In the back of house area, at the hand wash station near the three compartment sink, the paper towel dispenser was out. [CA] Single-use sanitary towels shall be provided in dispensers; heated-air hand drying device may be substituted for single-use towels. [COS] PIC restocked the dispenser. There is another hand wash station near the oven in the back of house area.
