Observed the following items to be stored within vacuum sealed bags on a rack within the walk in freezer: raw chicken, sliced ham, shrimp, turkey, bacon and churizo. [CA] The food facility shall obtain a HACCP plan approval prior to packaging PHFs using a reduced-oxygen packaging method. [COS] Items removed from ROP bags and placed in plastic wrap. Vacuum sealing machine removed.
