    Metal tray of bread is noted on top of the garbage can at the time of inspection. [CA] All food shall be separated and protected from cross-contamination. Discontinue this practice. [SA] Tray was placed on top of a stainless steel table.

  • K33: Nonfood contact surfaces clean

    Heavy dust build up noted on the fan guards of the walk in at the time of inspection. [CA] Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

  • K40: Wiping cloths: properly used, stored

    Sanitizer (chlorine) buckets were measured at 25PPM at the time of inspection. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium). [COS] PIC changed out sanitizer buckets; re-measured at 100PPM.

  • K45: Floor, walls, ceilings: built,maintained, clean

    Large hole noted in the back door of the facility at the time of inspection. Per PIC, they are making repairs to door soon. [CA] Repair holes in structure and maintain in good repair to prevent pest harborage.

    Facility has installed a new hand wash station in the front of the facility that has not been approved by the department. [CA] A person proposing to build or remodel a food facility shall submit plans and specifications for review and shall receive plan approval prior to starting any new construction or remodeling. Plan check is under SR0877507. - Plan check process has still not been completed. Provided a copy of the senior inspector report to PIC to move project along.     Consumer advisory on menu is not specific on what food items the advisory is for. [CA] Provide consumer warning for the sale of raw or undercooked animal-derived foods. Be more clear on the menu what items the consumer advisory is for.

  • K30: Food storage: food storage containers identified

    Bulk containers in the back of the facility are not labeled with the common name. [CA] Working containers holding food or food ingredients that are removed from their original packages shall be identified with the common name of the food if not easily recognizable.

    Liquid waste for the coffee machine is draining into a bucket at the time of inspection. [CA] Liquid waste shall be disposed of through the approved plumbing system and shall discharge into the public sewerage or into an approved private sewage disposal system.

    Noted a damaged lid in the walk in that is holding pooled eggs. [CA] Equipment and utensils shall be designed and constructed to be durable and retain characteristic qualities under normal use conditions.
