    In the kitchen, observed a single fruit fly. In the bar area, observed multiple fruit flies. [CA] Ensure facility is kept free of fruit flies to prevent possible contamination of food.

    In the walk-in refrigerator, measured three large containers of cooked potatoes cooling between 60F and 88F. Per labeling, cooked potatoes prepared over 6 hours prior. [CA] Ensure potentially hazardous foods are RAPIDLY cooled from 135F to 70F within 2 hours, and then from 70F to 41F within 4 hours. Cooling shall be facilitated by one or more of the following methods: using an ice bath, by adding ice, using shallow containers, separated into smaller portions, using ice paddles, and/or using rapid cooling technology. [COS] Operator discarded containers of cooked potatoes.

    Several fruit flies in bar area. [CA] Food facility shall be kept free of insects, weevils, ants, gnats, and fruit flies.

    Measured chlorine at 25 ppm in warewash machine in main kitchen. [CA] Maintain chlorine in mechanical warewash machine at 50 PPM. Clean, wet metal containers are stacked directly on top of one another and stored in a way that does not facilitate air drying. [CA] Equipment and utensils must be air dried or properly stored to facilitate drying after sanitizing.
