- K30: Food storage: food storage containers identified
Large containers of powered foods do not have labels. [CA] Working containers holding food or food ingredients that are removed from their original packages shall be identified with the common name of the food if not easily recognizable.
- K34: Warewash facilities: installed/maintained; test strips
Quaternary ammonium test strips are not provided. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing. Provide quat ammonium test strips to measure sanitizer concentration of 200 ppm.

Several potentially hazardous milk beverages are held between 47F - 57F inside the preparation refrigeration unit in front of the ice machine for longer than 4 hours. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] beverages were voluntarily discarded down the drain by PIC (see VCD&D).
- K39: Thermometers provided, accurate
No thermometer observed inside the beverage refrigeration unit. [CA] A thermometer +/- 2°F shall be provided and correctly located in each hot and cold holding unit containing potentially hazardous foods.
- K40: Wiping cloths: properly used, stored
Observed wet wiping cloths stored on counter tops throughout kitchen. [CA] Dry or wet cloths that are used with raw foods of animal origin shall be kept separate from cloths used for other purposes, and wet cloths used with raw foods of animal origin shall be kept in a separate sanitizing solution. [COS] PIC set up sanitizer buckets during inspection.

Food containers do not have covers/lids inside the walk-in freezer. [CA] Store open bulk foods in approved NSF containers with tight fitting lids.
- K35: Equipment, utensils: Approved, in good repair, adequate capacity
Refrigeration unit for PHF beverages has ambient temperature of 52F. [CA] Ensure equipment cold holding PHFs is able to maintain food at or below 41F.
