    Front service area was lacking a paper towel dispenser. [corrective action] Install a paper towel dispenser in this area. Note: Roll of paper towel was available.

    Hand wash sink in the kitchen lacked paper towels. Paper towels were maintained outside of dispenser on the preparation table directly across from the hand sink. [CA] Paper towels shall be stored inside the dispenser to prevent potential contamination. [COS] Employee placed paper towels inside dispenser.

    Employee observed using three-compartment sink to conduct food preparation; cutting chicken, dry batter for popcorn chicken placed on the drain board of the three-compartment sink. * Food preparation sink was available for use at the time. [CA] Utilize sinks for their designated purpose. Food preparation shall be conducted at the food preparation sink. Utensils maintained below the paper towel dispenser at the hand wash sink at the front service area. [CA] All cleaned utensils shall be stored in a clean, dry location where they are not exposed to splash, dust, or other contamination, and at least six inches above the floor. Relocate away from under dispenser.

    At time of inspection, boba subjected to time as a public health control was not time marked. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Employee stated that the boba was just prepared. Time label was provided on the boba.
