    Boxes of turkey sandwiches observed to kept on countertop. Per operator items are on TPHC. No TPHC log available for sandwiches [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Per employee boxes of turkey sandwiches was delivered from kitchen 2 hours prior. Per kitchen employee sandwiches are made off site and stored in walk in cooler and then taken to playmaker briefing room. Sandwiches were retroactively labeled.
