  • K18: Compliance with variance/ROP/HACCP Plan

    Current CDFA license was not available for review. [CA] Ensure that CDFA license is available at all times during operation.

  • K21: Hot and cold water available

    Hot water at three compartment sink measured 103F after allowing the water to run. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks.

  • K14: Food contact surfaces clean, sanitizedCritical

    Observed employee washing equipment with soap and water. Employee then placed equipment on drying rack without sanitizing. [CA] Manual warewashing shall be accomplished by using a three-compartment sink where the utensils are first precleaned, washed with hot soapy water, rinsed with hot water, sanitized with an approved method, and air dried. Use 1 TBS of bleach (5.25%) per 1 gal. of water for chlorine solution (100 PPM). Use 1 tbs of quaternary ammonium (10%) per 2 gal. of water for quaternary ammonium (200 PPM).

    Observed employee handle their personal phone and then handled food equipment after without removing gloves and washing hands prior to handling equipment. [CA] Remove gloves and wash hands with soap and water before placing new gloves and handling food equipment.

  • K23: No rodents, insects, birds, or animals

    Observed what appeared to be fruit flies in the back preparation area. [CA] Food facility shall be kept free of non-disease carrying insects, weevils, ants, gnats, and fruit flies.

  • K34: Warewash facilities: installed/maintained; test strips

    Test strips were not available at time of inspection. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.

  • K41: Plumbing approved, installed, in good repair; proper backflow devices

    Observed drainage lines of equipment in back preparation area inside floor sink. [CA] All equipment that discharges liquid waste shall be drained by means of indirect waste pipes, and all wastes drained by them shall discharge through an airgap of a minimum one inch into a floor sink or other approved type of receptor. Faucet at three compartment sink only has a sprayer. [CA] Replace/repair faucet so that it has a spout along with the spray nozzle.
