    Half and half at counter observed to have no time marking or timer to keep track of time. Per operator half and half is changed when container is empty or every 4 hours and entire container is changed. If any extra left, half and half carafe is emptied [CA] When using TPHC (time as a public health control) instead of temperature, ensure PHFs are only removed from active temperature control for no more than 4 hours or discard at the end of 4 hours. To ensure time, PHF shall have time tracked or marked (via timer, label, logs, or other means). [COS] Per employee half and half has been out for about 3 hours hours. Carafe observed to be empty, and taken to the back and replaced with a fresh container of half and half. Time was written on white board to track 4 hours. Per operator they will order new timer to use for carafe tracking in the future.
