    In the kitchen area, on the wire shelf next to the cook line, there are containers containing white crystalline substances without labels. [CA] Working containers holding food or food ingredients that are removed from their original packages shall be identified with the common name of the food if not easily recognizable.

  • K14: Food contact surfaces clean, sanitized

    Chlorine sanitizer in the three compartment sink measured at 0 PPM. [CA] Maintain chemical solution for manual warewashing at 100 ppm (1Tbs of bleach (5.25%)/gal of water) for chlorine and 200 ppm (1 tbs of quaternary ammonium (10%)/2 gal of water) for quaternary ammonium. [COS] Staff adjusted the solution of the sanitizer at time of the inspection. Facility was observed using the improper sanitizer test strip. Inspector educated on difference between chlorine test strip and quaternary ammonia test strip.
