A routine inspection was conducted in conjunction with a commissary evaluation. Facility approved to be used as the commissary for Caphi Cafe.

    The drain pipe at the prep sink observed missing. [Corrective Action] Install the drain pipe.

  • K36: Equipment, utensils, linens: Proper storage and use

    Observed clean utensils stored in a bucket on the floor next to the handwash sink. [Corrective Action] Discontinue storing clean utensils near the handwash sink due to possible contamination from handwashing splatter.

  • K06: Adequate handwash facilities supplied, accessible

    Soap was not dispensing at the soap dispensers at the handwash sinks. Soap from pump bottle was available nearby. [Corrective Action] Ensure soap is able to be dispensed from the soap dispenser at the handwash sink.

Facility is currently permitted as Risk Category 3. Per conversations with operator, foods are normally cooked on weekends and consumed on the same day. Facility will be re-classified to Risk Category 2.

    Hot and cold water not working at the food prep sink and one of the handwash sinks. No hot water at the handwash sink at warewash area. Some of the handles were observed broken. [Corrective Action] Provide hot and cold water to all sinks. Repair handle if necessary.

    Lack of test strips. [Corrective Action] Provide test strips to monitor sanitizer.

  • K06: Adequate handwash facilities supplied, accessible

    Lack of soap and paper towels at one of the handwash sinks. [Corrective Action] Maintain soap and paper towel dispenser are stocked at all times.
