Notes: 1. PIC stated the facility heats and cools corn milk. Upon review, facility may be upgraded to Risk Category 2. 2. Recommend clarifying TPHC written procedures to state exactly when/how the cooked boba will be time-labeled (specify whether employees will use a timer, written stickers, etc).

In the dry storage area: observed opened bags of matcha, coffee, corn powder etc. were opened and then rolled/clipped closed. [CA] After opening packaged foods, store food in rigid containers with tight-fitting lids.
- K08: Time as a public health control; procedures & recordsCritical
Cooked boba pearls on Time as a Public Health Control lacked time-labeling. PIC intially stated there was a timer in the back; however, upon inspection, there was no timer. Employee then created a labeled tape/sticker. Employee stated the boba had been held since 11:36am today (approximately 1 hour prior). [CA] When using TPHC, food must be IMMEDIATELY time-marked to be discarded within 4 hours. Ensure the method of time-marking is clear and consistent between employees. [SA] Employee retroactively time-labeled the cooked boba with a handwritten tape/sticker.
