Facility also has open foods and limited prep such as portioning slices of pizzas and cutting fruits. All food items are subject to time and discarded at the end of the meal service. At time of inspection, the time and temperature logs were reviewed. The food was received at 9:46 AM with cold foods measured at 40F, and hot foods measured at 147F. All food was time-marked to be discarded by 1:46 PM.
Hot water at the three compartment sink was measured at a maximum of 107F. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks.

At time of inspection, logs was observed that showed the food was received at 10:30 AM, and measured temperature of 39F. The food were time-marked to be discarded by 2:30 PM.
ROUTINE INSPECTION
Per SOPs facility gets lunch delivered around 10:00AM and lunch service starts at 11:00AM and all food is returned to choice lunch or discarded.
